Stacy and Colt Kuiack built Wild Table Outfitters around a simple proposition — that the food, the water, and the field belong on the same trip. Two generations of Vancouver Island and BC Interior wilderness. One company.

Co-Founder. Born in 100 Mile House, raised in rural Vancouver Island. Fly Fisher, Hunter, Kitchen Lead, and Accredited Sommelier. Stacy built the company around the food, the water, and the field.

Stacy has a life deeply connected to the landscapes, traditions, and outdoor culture of Canada. With a lifelong background in hunting, fishing, and wilderness, he brings an authentic perspective to hospitality and outfitting experiences rooted in the outdoors.

His extensive experience in professional kitchens is paired with a passion for wild game and elevated outdoor hospitality. As he says, 'You shouldn't be paying good money to catch mediocre fish while you're eating a gas station sub sandwich.'

He's an Accredited Sommelier, a Wilderness First Responder, a boat captain, and a consummate connector of people and places.

He grew up in hunting camps, canoes, powerboats, and pickups. Stacy's connection to the outdoors remains central to everything he creates — whether curating wilderness dining experiences, planning backcountry adventures, or sharing meals around a fire.

Colton "Colt" Kuiack

Vancouver Island

Co-Founder. 5th generation Vancouver Islander. The workhorse of the team. Avid skier, biker, athlete, and backcountry ombudsperson. The person who makes sure the wild half of the trip is built right.

Born in Victoria, BC, Colt has developed a strong and deep connection to the backcountry through years spent in the mountains and on the trails. With a background rooted in the mountains, oceans, and lakes that surround us, he has built a deep appreciation for the natural backdrop we work in.

With a strong athletic background rooted in endurance, movement, and technical ability, Colt brings a dynamic and adventurous approach to outdoor experiences. His approach combines athletic capability, technical understanding, and a natural enthusiasm for the outdoors.

Whether navigating alpine terrain, designing backcountry experiences, or helping guests feel comfortable in new environments, he focuses on creating experiences that are exciting, approachable, and deeply connected to the places they happen in.

02 · The premise

Why two of us. Why father and son.

The simplest version: one of us knows the kitchen, the wine, and the people. The other knows the mountain, the water, and the gear. Neither of us could run the trips we run by ourselves. We've had to teach each other our halves over the years — which means by the time a guest arrives, the program is genuinely built from both ends, not handed off mid-day.

Stacy came up through professional kitchens and the BC ranching country. Colt came up on Vancouver Island ski hills, mountain bike trails, and powerboat docks. Different paths, same set of values about how a day in the outdoors is supposed to feel.

Most outfitters are one person's vision. Wild Table is the agreement two of us had to come to about what good actually looks like — from the first cast at dawn to the last pour at the end of the table. We think the trips are better for it. We think you will too.
